Sandy mutates into jam-making Earth Mother (or something)

Making the cranberry compote got me hooked on cooking jam. So, for the first time in my life I made strawberry jam today. Unfortunately the 2:1 gelling sugar STINKS! Duh. Next time I’ll have to try the 1:1 version.

What else did I do today? Well, I took my oven apart in order to clean the door. Remember when the milk boilt over? Milk ran between the two layers of glass of the stupid door of the oven. Hence, the disassembling of the oven, followed by vigorous scrubbing.

    You would have to mentuion cleaning the oven. I’ve been putting it off and putting it off.
    I made wild grape jam last week – but boiled it too long so it’s very sticky, rather like candy. My son loves it on his toast though, so it’s not gone to waste! Fig jam is next – they all seem to ripen at once on a sunny day!

    As far as I can remember from watching my mother’s jam-making, strawberry is one of the more tricky jams to make, because strawberries don’t have much of their own pectin, which is what helps the jam set.

    Maybe the amount of added pectin is what makes the difference between the different kinds of gelling sugars?

    Yup, I’ve finally figured it out, too. And the pectin is also what makes the sugar stink. Duh. BUT!!! Fortunately, after the jam has cooled off the strange smell has vanished and now it smells like strawberry ice cream. 🙂 It’s a bit thicker and gellier than I like, so I’ll need to experiment with substituting normal sugar for some of the gelling sugar.

    The advantage of the gelling sugar is that you have to boil the jam for only 4 minutes instead of 30 or 40.

    Hmm. As I said, I’ll need to experiment a little. And buy frozen fruits!!! *lol*

    I accidentally made jam last night.

    I was trying to make a blackberry syrup sor of thing to go over the lemon cheesecake The Man was making, but I got all distracted with my blog and my chat group and it boiled down to jam.

    Tangy and tart on toast!
